Some recommendations would be rice, quinoa or pasta. If you opt for the last option, cut the eggplant into cubes, instead of slices and add any sauce you want.

  • 2 large eggplants
  • 1 cup breadcrumbs (150 g)
  • 2 tablespoons salt (30 g)
  • 1 tablespoon pepper (15 g)
  • Tablespoon dried parsley (8 g)
  • 2 tablespoons balsamic vinegar (30 ml)
  • ¼ cup of olive oil (40 ml)
  • 1 cup of water (300 ml)

1. Cut the eggplant into slices about 2.5 cm thick.

3. In another bowl, mix balsamic vinegar, remaining salt, pepper and parsley.
